Ranch Beans (Cowboy Cuisine)

Ranch Beans

Alright...This is definitely my own creation and folks absolutely love them.

2 cups pinto beans (Soak beans overnight)
6-8 thick cut slices Salt Pork
6 slices bacon (cook till really crisp then chop up...pour grease into pot with beans)
3-4 garlic cloves (minced)
2tbsp chili powder
1 whole sweet yellow onion (chopped, large pieces)
5 cups water
1tspn ground pepper
1tspn Worchestershire Sauce
1tspn brown sugar
1 small white potato
Salt to taste

Place all ingredients into a pot and bring to boil. Take the bacon and crumple it up in your hand over the pot. Take the leftover grease and pour it into the pot with the beans. Leave the 6-8 thick cut slices of salt pork stay the way they are. Let boil for 10 minutes then let simmer for approximately 40 minutes. When ready to serve, take out the potato and throw it away. Feeds about 6 people with left overs.
