Prime Rib

It's surprising how many folks I've encountered that are afraid to make Prime-Rib at home. Pretty simple actually:

Get any cut of Bone-in rib eye roast (I usually have the local butcher cut in 6-8 pound chunks, cut the ribs off and tie back on). You don't need to spend $19/pound. Any $5/pound bone-in rib eye will work.

- Let sit on your counter (wrapped) to reach room temperature
- Pre-heat your oven to 475F
- Hand season (rub) any of the following (or your favorites): Cayenne, Season-All (McCormick), Course Ground Black Pepper, Sea-Salt
- Inject a few chunks of garlic randomly in the meat
- Place on a broiling pan w/drip tray (DO NOT COVER THE MEAT!)
- Place in oven for 15 minutes @ 475F
- Reduce temperature to 350F
- Insert meat thermometer in center
- Remove meat once meat reaches 120-130F
- Let meat sit on counter for 15 minutes
- Cut and serve with your choice of Au Jus
