Irish pan fried steak

Get whatever steaks you favor, but they can't be thick. No more than 1 inch. I prefer Porterhouse.

Beat your meat (tenderize)
Sprinkle pepper on both sides
Using a cast iron frying pan, put in a half a stick of butter. Sometimes I might use olive oil. Heat it up until the pan starts smoking.

Put the steaks in. This sears the meat. Cook on one side for about five minutes, then flip over.

Drain the grease off the pan, but not all the bits of burned up fat and meat.

Pour in a 1/2 cup of Irish whiskey. Jameson's if you are Catholic, Bushmills if your are Protestant. Either if you don't give a shit (its a tradition thing). DO NOT use Scotch... yeesh! Do you want to drink anything coming from a guy with a skirt?

Let the whiskey cook off for a bit, about a minute.

Pour in a pint of heavy whipping cream. Stir it about. Cook until it thickens up a bit. I like a lot fo salt so I throw some salt in at this time.

Pour the gravy over the steaks.

I like to serve it with the wide noodles, but it is not the traditional method.

I wanna give this a shot when I get back. Have just enough Jameson left to use for the recipe (Tullamore Dew is for the drinking.)

Do you think there'd be any real difference with a stainless steel pan?

I've always been partial to cast iron. All that new fangled stuff like teflon and stainless steel is a fad. It won't catch on.

In reality, it most likely won't be that big of a difference. You may have to watch the heat, since cast iron disperses it better.

I tossed all of my teflon frying pans and now only own cast iron. You can bake with them or broil, fry, roast. In case of a zombie attack they make a nice weapon.
