This recipe calls for beef short-ribs, but it also works great with sirloin tips, skirt steak, chicken.. just about anything.
Marinade:
1/2 medium apple, cored and sliced
1/4 cup garlic, sliced thin
1/4 cup ginger root, sliced thin
2 cups soy sauce
1/2 cup sake (or any dry white wine)
1/2 cup mirin (sake vinegar)
3/4 cup brown sugar
2 tbsp sesame oil
Put everything in a pot and bring to a boil, then reduce to simmer for 15 minutes. Let cool before using. Will keep in the fridge for 2 to 3 weeks.
When ready to use, strain all the sliced stuff out and add:
2 tbsp toasted sesame seeds
1/4 cup scallion, sliced thin
Marinade meat for 20 minutes. Make sure meat is sliced thin. Cook meat as desired (kebabs, straight on grill, etc. ) but cook over medium-high heat, turning often until desired doneness.
